Last night was a great night in. Kev and I don't usually go out for NYE - if we do it's with a couple of friends - nothing major. I really contemplated making reservations somewhere - but all the menus were set menus - with about half of the items things that neither Kev nor I were interested in.
So, instead, I created a menu and cooked a wonderful meal. I made bruschetta, garlic-herb roasted pork loin, garlic mashed potatoes, apricot bellinis, spinach salad, and chocolate lava cake. (I'll put the recipes at the end) We played games then got in pjs - climbed in bed, watched TV then watched the ball drop. It was nice.
This morning, I got up and made a fabulous breakfast - french toast made form cinnamon-raisin bread and a blueberry breakfast crisp (blueberries and a crunchy oat topping) - I put mine over yogurt. YUM! We watched some TV and then I hopped on the elliptical and had a good 45-minute workout. I need to get a shower now.
I have a really good feeling about 2009...
